Dump-and-Go Baked Lemon Chia Oatmeal Casserole

 Dump-and-Go Baked Lemon Chia Oatmeal Casserole

Serves: 8–12

Bake Time: 45–50 minutes
Total Time: ~55 minutes

A zesty, refreshing twist on baked oats—perfect for gentle digestion and make-ahead mornings.

This bright and cozy lemon chia oat bake is yummy and so easy to prep, low FODMAP, and loaded with fiber-rich oats and chia seeds. With citrusy flavor and a creamy, comforting texture, it’s the kind of breakfast that feels like sunshine in a bowl. The casserole will thicken as it cools, so right out of the oven it's like your typical oatmeal, but as it cools you can slice into it like a typical casserole. 

Ingredients

  • 2 cups steel cut oats

  • 4 cups water

  • 2 cups plant-based milk

  • ½ cup maple syrup or sweetener of choice

  • Zest of 4 lemons

  • Juice of 4 lemons (about 6 tablespoons)

  • 2 tsp pure vanilla extract

  • 1 tsp salt

  • 4 tbsp chia seeds


Instructions

  1. Preheat your oven to 350°F (175°C).

  2. Grease or line a 9x13 inch baking dish with parchment paper.

  3. Add the following directly into the dish:

    • Steel cut oats

    • Water

    • Plant-based milk

    • Maple syrup or sweetener

    • Lemon zest and juice

    • Vanilla extract

    • Salt

    • Chia seeds

  4. Stir gently right in the dish until everything is evenly combined.

  5. Cover tightly with foil and bake for 45–50 minutes, or until the oats are tender and most of the liquid has been absorbed.

  6. Let cool for 5–10 minutes to allow it to thicken before serving. The longer it cools, the thicker and more "casserole" like it will be. (I took this picture right after it came out of the oven so that's why it looks more like regular oatmeal.)


Serving Suggestions

  • Add a splash of extra plant-based milk on top

  • Serve with fresh berries

  • Top with a dollop of yogurt of choice

  • Drizzle with a little more maple syrup for extra sweetness
