Delicious Vegan French Toast

Delicious Vegan French Toast (Dairy-Free & Egg-Free)
Makes: 9 pieces • Total Time: 15 minutes • FODMAP Rating: low

This is a great recipe to use up slightly drier or older bread. It is fast, easy and nutritious french toast! You will not only love the taste, but you will love the smell of this french toast cooking in your pan! If you have Trader Joe’s, try their vegan brioche sliced bread for a nice thick toast.

Ingredients
1 cup plant-based milk
½ cup canned pumpkin
¼ cup cornstarch
2 tablespoons granulated sugar, preferably coconut
1 teaspoon flaxseed, ground
1 teaspoon vanilla
1 teaspoon ground cinnamon
¼ teaspoon nutmeg
¼ teaspoon ginger
dash of ground cloves
9 pieces bread, preferably whole wheat
oil spray, to prevent sticking

Instructions
In a large bowl, whisk together all ingredients except for the bread. It is best to whisk the cornstarch with cold plant-based milk to make sure no lumps remain before adding the other ingredients.
Lightly spray a non-stick pan or skillet and place over medium heat. If you are using a stainless steel pan, best to let the pan heat and place drops of water and watch it sizzle to check if it is hot enough for oil. Turn down the heat slightly and increase as needed to avoid burning toast.
Dip each side of the bread quickly to minimize it getting soggy and cook for 2 to 3 minutes on each side until golden brown.
Note that these do take just a little longer to cook than the typical french toast.

*Gluten-Free: Check the frozen aisle for gluten-free bread alternatives
*FODMAP Swaps: If using oat or soy milk keep it under ⅔ cup per serving and increase as tolerated
