Crispy 5-Minute Seitan

🧇 Crispy 5-Minute Seitan Savory Waffles
Makes: 1 serving (36 grams of protein per serving!)
I first learned this recipe from Dani over at Vegan Proteins, and it’s become one of my favorite easy, go-to ways to get in a healthy dose of plant-based protein—especially if you don’t have a gluten sensitivity.
Below is the base savory version, but it’s incredibly versatile. You can easily switch up the flavor by swapping the garlic, onion powder, and salt for your favorite savory seasonings.
Want to make it sweet instead? Just use 2 tablespoons of powdered peanut butter in place of the nutritional yeast, then add a little sweetener and even some cocoa powder for a delicious protein treat!
Ingredients:

1/3 cup vital wheat gluten

1 tablespoon nutritional yeast

1 tablespoon powdered peanut butter (e.g., PB2)

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/2 cup water
Instructions:

Preheat your waffle maker or panini press and spray with oil.

In a medium bowl, combine all dry ingredients: vital wheat gluten, nutritional yeast, PB powder, garlic powder, onion powder, and salt.

Add water and stir until a dough forms. Knead it lightly for 30 seconds to activate the gluten.

Place the dough into your preheated waffle maker (you can flatten it slightly with your hands first).

Cook for 5 minutes, or until golden and firm.

Let cool slightly, then break apart into chunks.
Serving Suggestions:

Toss pieces onto a salad as high-protein croutons

Dip into soups or stews for a savory, chewy addition
