Creamy Red Lentil Pasta

Creamy Red Lentil Pasta

Ingredients

  • 1 cup dried red lentils

  • 2 cups water

  • 12 oz pasta of choice

  • 1 jar (about 24 oz) marinara sauce, divided

  • 1 teaspoon minced garlic

  • ½ cup cashews

  • ¼ cup nutritional yeast

  • 1 teaspoon vegetable bouillon

  • Water as needed for blending

  • Italian seasoning (optional, for topping)

  • Extra nutritional yeast (optional, for topping)


Instructions

  1. Cook lentils:
    Add lentils and 2 cups water to a saucepan. Bring to a boil, then reduce to simmer for 10–15 minutes until soft.

  2. Cook pasta:
    While lentils cook, boil pasta according to package instructions. Drain and rinse if desired.

  3. Make the creamy sauce:
    In a blender combine:

    • Cooked lentils

    • ¾ of the jar of marinara sauce

    • Minced garlic

    • Cashews

    • Nutritional yeast

    • Bouillon

    • A splash of water (as needed for blending)

    Blend until smooth and creamy.

  4. Combine:
    Pour sauce over cooked pasta and stir to coat evenly. Add remaining ¼–½ jar marinara if desired for extra sauciness.

  5. Serve:
    Top with additional nutritional yeast and Italian seasoning.
