Creamy Red Lentil Pasta

Ingredients

1 cup dried red lentils
-
2 cups water
-
12 oz pasta of choice
-
1 jar (about 24 oz) marinara sauce, divided
-
1 teaspoon minced garlic
-
½ cup cashews
-
¼ cup nutritional yeast
-
1 teaspoon vegetable bouillon
-
Water as needed for blending
-
Italian seasoning (optional, for topping)
-
Extra nutritional yeast (optional, for topping)
Instructions

Cook lentils:
Add lentils and 2 cups water to a saucepan. Bring to a boil, then reduce to simmer for 10–15 minutes until soft. -
Cook pasta:
While lentils cook, boil pasta according to package instructions. Drain and rinse if desired. -
Make the creamy sauce:
In a blender combine:-
Cooked lentils
-
¾ of the jar of marinara sauce
-
Minced garlic
-
Cashews
-
Nutritional yeast
-
Bouillon
-
A splash of water (as needed for blending)
Blend until smooth and creamy.

Combine:
Pour sauce over cooked pasta and stir to coat evenly. Add remaining ¼–½ jar marinara if desired for extra sauciness. -
Serve:
Top with additional nutritional yeast and Italian seasoning.
