Creamy Peanut Butter Chia Pudding

Creamy Peanut Butter Chia Pudding
This rich and creamy peanut butter chia pudding is the perfect grab-and-go breakfast, snack, or healthy dessert! Naturally sweetened and packed with fiber, protein, and healthy fats, it comes together in minutes and sets up beautifully in the fridge.

Serves: 4
Prep Time: 5 minutes
Chill Time: 4 hours minimum (or overnight)
Total Time: ~4 hours 5 minutes

Ingredients:
2 tabelspoons chia seeds
2 tablespoons peanut butter
2 cups sweetened soy milk
1 tablespoon pure maple syrup
1 teaspoon cinnamon
Dash of cinnamon (for topping)

Instructions:
1.Mix base ingredients:
2.In a large bowl or jar, whisk together the soy milk, peanut butter, maple syrup, and 1 teaspoon cinnamon until smooth and well combined.
3.Add chia seeds: Stir in the chia seeds, making sure they are evenly distributed.
4.Let it thicken: Cover and refrigerate for at least 4 hours or preferably overnight to allow the chia seeds to absorb the liquid and thicken.
5.Stir and serve: Before serving, give it a good stir. Sprinkle a dash of cinnamon on top for extra flavor!

Optional toppings:
Top with sliced bananas, berries, extra peanut butter drizzle, or chopped nuts if desired.
Notes:
If the pudding gets too thick, simply stir in a splash of extra soy milk before serving.
Keeps well in the fridge for up to 4–5 days.
Quick Tip:
You can also portion it into small jars or containers after mixing to have individual servings ready to grab!
