Coconut Lemon Energy Bites

Coconut Lemon Energy Bites
Makes 20 balls • Total Time: 15 minutes • FODMAP rating: high

Looking for a healthy snack that’s both delicious and easy to make? Try these vegan coconut lemon energy balls! With just a few simple ingredients, you can whip up a batch of these zesty, bite-sized treats. Perfect for on-the-go snacking or a quick energy boost. Vegan, gluten-free, and absolutely scrumptious!

Ingredients
1 cup rolled or old fashioned oats
1 cup raw cashews
1 (15oz) can chickpeas, drained and rinsed*
1 cup or 8 medjool dates, pitted
¼ cup lemon juice
1 teaspoon pure vanilla
½ cup or more unsweetened shredded coconut flakes

Instructions
1. In a food processor blend 1 cup of oats until a fine flour is formed.
2. Add cashews, chickpeas, dates, lemon juice, and vanilla.
3. Blend until a dough-like consistency is created.
4. Pulse in your ½ cup coconut.
5. Dough will be a little bit sticky, be sure to wet your hands so it doesn't stick to you.
6. Using a cookie dough scoop or your hand create small balls and roll them in extra shredded coconut.
7. Store in an airtight container in the refrigerator for up to 2 weeks or in the freezer for up to 2 months.

 

*Don’t forget to preload on vegetables before you eat!
*Aquafaba or liquid from canned chickpeas or garbanzo beans can be saved to be used in other recipes like the Cashew + Peanut Bars
*Nut-Free: Use sunflower seeds instead of cashews
*FODMAP Swaps: Start with 1 medjool date and add ½ cup maple syrup; due to chickpeas, start with 3-4 bites and increase as tolerated
