This quick and easy dessert is made with protein-packed tofu, melted chocolate chips, maple syrup, and cocoa powder, creating a velvety treat that’s perfect for satisfying your sweet tooth. Customize with your favorite toppings like granola, coconut, or fresh fruit. While this recipe is a high-FODMAP option, it’s a delicious way to enjoy a plant-based dessert that feels indulgent yet nourishing. Enjoy fresh or store leftovers in the fridge for up to a week!

Ingredients
1 package tofu (firm or extra firm for thicker pudding)
½ cup chocolate chips
¼ cup maple syrup
1 teaspoon vanilla
3 tablespoons cocoa powder


Optional toppings:
Granola, shredded coconut, pumpkin seeds, fresh fruit

Instructions
1.Melt chocolate chips in the microwave. Place everything in a high speed blender and blend until smooth. Scoop into bowls and add desired toppings. You can store extras in the fridge for up to one week.
