Chocolate Peppermint Cookies

Chocolate Peppermint Cookies

Servings: About 12 cookies
Total Time: 20 minutes

Ingredients

  • 1½ cups flour (any type)

  • ½ cup sugar

  • ¼ cup cocoa powder

  • ½ teaspoon baking soda

  • ½ teaspoon salt

  • ¼ cup butter (or vegan butter)

  • ¼ cup sweetened soy milk

  • â…“ cup unsweetened applesauce

  • ¼ teaspoon peppermint extract

  • ½ cup chocolate chips

  • 2 candy canes, crushed

Instructions

  1. Preheat oven to 350°F (175°C).

  2. In a bowl, mix flour, sugar, cocoa powder, baking soda, and salt.

  3. Add butter, soy milk, applesauce, and peppermint extract. Mix until combined.

  4. Fold in chocolate chips and crushed candy canes.

  5. Scoop dough onto a lined baking sheet. Sprinkle extra candy cane pieces on top if desired.

  6. Bake for 10 minutes. Let cool slightly before serving.
