Chocolate Chickpea Mousse
Servings: 2-4 Prep Time: 5 minutes. FODMAP: high
A mix between a chocolate hummus and a chocolate mousse. It is vegan, full of fiber, and protein, and so yummy! Made with just 3 simple ingredients
Ingredients
1 can chickpeas, rinsed and drained
3/4 cup chocolate chips
1/2 cup plant milk
Optional ingredients
a spoonful of peanut butter (optional)
1 tsp vanilla extract (optional)
a dash of maple syrup for sweetness (optional)
Instructions
1. Melt the chocolate in the microwave for about 1 minute, (add an additional 30 seconds if needed).
2. Rinse and drain the chickpeas. Then add the chickpeas, chocolate and 1/2 cup of plant milk to the blender and blend until it becomes a smooth chocolate mousse.
You can store it in the fridge and it will thicken over time.
