Chipotle Black Bean Bowls

Chipotle Black Bean Bowls 
Serves 4-6 • Total Time: 30 minutes: • FODMAP Rating: high

Get ready to spice up your meals with these flavorful Chipotle Black Bean Bowls! 🌶️🥗 Perfect for a quick and nutritious dinner, this recipe combines roasted sweet potatoes, black beans, kale, quinoa, and creamy avocado, all topped with a zesty chipotle tahini sauce. Ready in just 30 minutes, it's a high FODMAP dish that's customizable for spice level and dietary needs.


Ingredients for the sauce
ÂĽ cup water (add vegetable bouillon for extra flavor) 
ÂĽ cup tahini
1 tablespoon maple syrup
1 to 2 chipotles in adobo sauce
1 small clove of garlic
ÂĽ cup or juice of 1 orange
½ teaspoon salt

Ingredients for the bowls
2 roasted sweet potatoes, cubed
1 can of black beans
3 to 4 stalks kale
1 cup of quinoa, cooked in vegetable broth
2 avocados

INSTRUCTIONS
Pulse all sauce ingredients in a food processor until smooth. Season to taste.
Cook and prepare your bowl ingredients.
Add the sauce

*Don’t forget to preload on vegetables before you eat!
*For less spicy option use 1 to 2 tablespoons of just the adobo sauce
*FODMAP Swaps: Keep onion and garlic to under 1 teaspoon and increase as tolerated or check introduction for lower FODMAP flavorings like chives or green scallions; keep avocado portions to under â…“ whole avocado; keep black bean portions to under ÂĽ cup
