Chickpea Cookie Dough Balls

 Chickpea Cookie Dough Balls

Makes: 12-15 balls | Prep Time: 10 minutes

These chickpea cookie dough balls are perfect for snacking, satisfying your sweet tooth, or even a post-workout treat! 😊

Ingredients

  • 1 (15 oz) can chickpeas, drained, rinsed, and patted dry
  • 1/4 cup natural peanut butter (no added sugar or oil)
  • 3-4 tbsp maple syrup (adjust to taste)
  • 1/2 tsp vanilla extract
  • 1/2 cup oat flour (or rolled oats blended into flour)
  • Pinch of salt
  • 1/3 cup vegan chocolate chips

Instructions

  1. Prepare the Chickpeas:
    • Drain and rinse the chickpeas thoroughly, then pat them dry with a towel to remove excess moisture. For an ultra-smooth texture, remove the chickpea skins by rubbing them gently between your fingers (optional).
  2. Blend the Dough:
    • Add the chickpeas, peanut butter, maple syrup, vanilla extract, oat flour, and salt to a food processor.
    • Process until the mixture is smooth and starts to form a dough-like consistency. Scrape down the sides of the bowl as needed.
  3. Fold in Chocolate Chips:
    • Transfer the dough to a mixing bowl and fold in the vegan chocolate chips.
  4. Roll into Balls:
    • Scoop out small portions of the dough (about 1 tablespoon each) and roll into balls using your hands.
  5. Chill and Serve:
    • Place the cookie dough balls on a plate or baking sheet and refrigerate for 20-30 minutes to firm up.
  6. Enjoy:
    • Store in an airtight container in the fridge for up to 5 days or freeze for longer storage.
