Black Beans & Yellow Rice

Black Beans & Yellow Rice

Easy, flavorful, family-friendly, and perfect for meal prep!

Ingredients

Yellow Rice

  • 4 cups rice (white or jasmine works best)

  • 5 cups water

  • 5 teaspoons vegetable bouillon

  • 2 teaspoons turmeric

  • 2 teaspoons smoked paprika

  • 1 teaspoon onion powder

  • 1 teaspoon garlic powder

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • ½ teaspoon coriander

Seasoned Black Beans

  • 1 bag frozen peppers or 1–2 fresh bell peppers, sliced

  • 2 cans black beans (1 seasoned, 1 unseasoned), drained and rinsed

  • ½ bag frozen corn

  • Fresh vegetables of choice (spinach, tomatoes, green onions — optional)

  • Additional seasonings if desired (cumin, smoked paprika, garlic powder, lime, cilantro)


Instructions

Yellow Rice (Instant Pot or Rice Cooker)

  1. Add rice, water, bouillon, turmeric, smoked paprika, onion powder, garlic powder, salt, black pepper, and coriander to your Instant Pot or rice cooker.

  2. Stir well.

  3. Instant Pot: Cook on Manual/Pressure Cook for 22 minutes, then allow a natural release for 5–10 minutes.
    Rice Cooker: Cook as usual until cycle completes.

  4. Fluff the rice with a fork.


Seasoned Black Beans

  1. In a large pan, sauté peppers in a splash of water until softened.

  2. Open both cans of black beans. Add them to the pan.

  3. Add ½ bag of frozen corn and stir.

  4. Let everything simmer for 5–10 minutes until heated through.

  5. Add any optional fresh vegetables (spinach wilts beautifully here).

  6. Taste and adjust seasoning: add cumin, smoked paprika, garlic powder, lime juice, or cilantro if desired.


Serve

Scoop a generous serving of yellow rice into bowls and top with seasoned beans.
Garnish with cilantro, lime, avocado, salsa, or hot sauce — whatever fits your vibe.

  • Chopped tomatoes

  • Avocado slices
