Black Bean Salsa Casserole

Black Bean Salsa Casserole

Serves: 6-8  • Total Time: 30-45 minutes • FODMAP Rating: high


This recipe can be made as a typical casserole or in the instant pot to make it easier. It also is the perfect recipe to make for a freezer meal to have on hand. I like to make multiple batches at once. One to eat right away and a couple others to free save for later. 

 Ingredients
2 cans black beans 
2 cups veggie broth
1 cup corn
1 1/2 cups brown rice
½ cup diced red onion
1 8 oz can diced green chilis 
1 can diced tomatoes 
1 cup of your favorite salsa
2 tablespoons taco seasoning 

Instructions
1.Add everything to a casserole dish and bake for 40 minutes at 375 degrees OR add it all to your instant pot and cook on high pressure for 22 minutes. 

2. Let cool (I actually prefer to add the one cup of frozen corn at the very end to cool it down). Garnish with cilantro or green onions and serve!
