BBQ Carrot Li’l Smokies

BBQ Carrot Li’l Smokies

BBQ Carrot Li’l Smokies
Serves: 8 • Total Time: 6 hours • FODMAP rating: medium to high

This is a fun take on traditional Li’l Smokies, minus the beef! Carrots are a great source of beta-carotene and fiber. Try this instead of plain carrots next time and see how everyone loves it! Make it a meal by serving with bread or tossed salad.

Ingredients
1 pound baby carrots
¼ cup vegetable broth or ¼ teaspoon vegetable bouillon
¼ cup apple cider vinegar
¼ cup coconut aminos, soy sauce or tamari
2 tablespoons maple syrup or sweetener of choice
1 ½ teaspoon liquid smoke
¼ teaspoon dijon mustard
½ teaspoon paprika, preferably smoked
½ teaspoon garlic powder
½ teaspoon onion powder
1 cup barbecue sauce (i.e. Stubbs Low Sugar brand)

Instructions
1.Whisk all ingredients together minus the carrots and BBQ sauce into a slow cooker. Once whisked, place carrots and cook for 1 ½ hour.
2.Drain off the marinade and save. You can use this marinade to make carrot dogs or freeze!
3.Add bbq sauce and cook for another 4-5 hours and enjoy!

*Don’t forget to preload on vegetables before you eat!
*You can make these in a pressure cooker and use the slow cooker function and follow the same cooking instructions.
*FODMAP Swaps: Use appropriate substitutions for garlic and onion if sensitive or keep it to under 1 teaspoon total of garlic and onion per serving, keep in mind barbecue sauce, vegetable broth and bouillon will have it as well.
