Ingredients:
1 ripe avocado, mashed (about 1/2 cup)
1/2 cup brown sugar
1/4 cup granulated sugar
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/4 cup cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup vegan chocolate chips

Instructions:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or silicone baking mat.
In a mixing bowl, cream together the mashed avocado, brown sugar, granulated sugar, and vanilla extract until smooth and well combined.
In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
Gradually add the dry ingredients to the avocado mixture, stirring until a dough forms.
Fold in the vegan chocolate chips until evenly distributed throughout the dough.
Using a spoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Gently flatten each cookie with the back of a spoon or your fingers.
Bake for 10-12 minutes, or until the edges are set. The cookies will still be soft in the center.
