Apple Oat Cookies with Almond Butter Glaze

Apple Oat Cookies with Almond Butter Glaze 
Serves 24 • Total Time: 45 minutes • FODMAP rating: medium to high

These soft and chewy Apple Oat Cookies are the perfect blend of cozy fall flavors and wholesome ingredients! Made with oats, fresh apples, and warm spices, they’re naturally sweetened and easy to make. Perfect for breakfast, a snack, or a healthy dessert—no dairy, no eggs, just pure plant-based goodness! 🍏🍪✨

Ingredients
Cookies
1 flax egg*
2½ cup oats
1 cup oat flour
2 teaspoon cinnamon
½ teaspoon nutmeg
½ teaspoon baking soda
½ teaspoon salt
1 cup unsweetened applesauce
½ cup honey or maple syrup
2 teaspoons vanilla extract
2 cups apples, shredded or finely diced

Almond Butter Glaze
½ cup almond butter
¼ cup honey or maple syrup

Instructions:
Set the oven to 350℉.
In a large mixing bowl, mix together oats, oat flour, cinnamon, nutmeg, baking soda and salt.
In another bowl, add the applesauce, honey or maple syrup, flax egg, vanilla and shredded apples.
Slowly stir in dry ingredients to the wet ingredients.
Drop the batter onto the cookie sheet and bake for 15 minutes.
While the cookies are baking, mix the almond butter and honey or maple syrup together.
After the cookies cool for 20 minutes. Drizzle the glaze on top of the cookies and serve.


*Don’t forget to preload on vegetables before you eat!
*To make a flax egg: Mix 1 tablespoon ground flaxseed mixed with 3 tablespoons cold water and set aside until gelled
*Nut-Free: Replace almond butter with granola butter (see week 6) or cookie butter
*FODMAP Swaps: Choose granny smith or pink lady variety apples for lower FODMAP content; choose maple syrup over honey or keep non-clover honey to 1 teaspoon and increase as tolerated
