Vegan Sunday Waffles

Vegan Sunday Waffles
Serves 4-6 | Total Time: 15-20 minutes | FODMAP: Medium

Only a few pantry ingredients create the perfect vegan weekend breakfast. These waffles are better than store-bought kind in more ways than one! They are better for your budget and for your health. Instead of eggs to thicken the batter we use flaxseeds packed with beneficial nutrients.Also! The beauty of this recipe is that they can be made into pancakes as well!

Ingredients
1 cup all-purpose flour
1/2 cup whole wheat flour
2 teaspoons baking powder
1/8 teaspoon salt
1/8 teaspoon cinnamon
2 flax eggs (2 tablespoons flaxseeds + 6 tablespoons of water)
2 tablespoons applesauce
1 large ripe banana, mashed
1 cup plant milk of choice

Instructions
1. Wisk together wet ingredients in a large bowl. Then add the dry ingredients until just mixed. 
2. Let the batter rest while you heat your waffle iron.
3. Scoop out 1/4 cup of the mixture onto your griddle and serve with favorite toppings.
