Vegan Purple Rice

This purple rice is rich in color and bursting with flavor! It can make the perfect side to your next meal or even be a meal on it's own if you top it with some beans!

Ingredients
2 garlic cloves
1/2 onion, finely diced 
3 cups finely chopped red cabbage
1/2 teaspoon salt
1/4 black pepper
1 cup brown rice
1 1/4 cup vegetable stock
green onions for toppings

Instructions
1. In a large saucepan water saute the onions and garlic until soft. Add cabbage, salt and pepper and cook for another 2-3 minutes, stirring from time to time until the cabbage starts to soften. 
2. Add the rice and stir well to coat the flavor. Scrape down the sides and press the cabbage down to ensure the rice is submerged.
3. Cook for 20 minutes by bringing to a simmer and cover with the lid. Turn the stove down to medium low and cook until the rice is soft. (Add more cooking time if needed)
4. Top with green onions and serve!
