Vegan Purple Rice

Vegan Purple Rice 
Serves: 4
Total Time: 30 minutes

Brighten up your meals with this Vegan Purple Rice recipe! Not only does this vibrant dish look stunning, but it’s also packed with antioxidants and nutrients from the naturally pigmented rice. Perfect as a side dish or base for your favorite plant-based meals, purple rice adds a pop of color and unique flavor to any plate. Simple to make and full of wholesome goodness, it's an easy way to enjoy a healthy, flavorful dish that stands out from the rest.

Ingredients
2 garlic cloves
1/2 onion, finely diced 
3 cups finely chopped red cabbage
1/2 teaspoon salt
1/4 black pepper
1 cup brown rice
1 1/4 cup vegetable stock
green onions for toppings

Instructions
1. In a large saucepan water saute the onions and garlic until soft. Add cabbage, salt and pepper and cook for another 2-3 minutes, stirring from time to time until the cabbage starts to soften. 
2. Add the rice and stir well to coat the flavor. Scrape down the sides and press the cabbage down to ensure the rice is submerged.
3. Cook for 20 minutes by bringing to a simmer and cover with the lid. Turn the stove down to medium low and cook until the rice is soft. (Add more cooking time if needed)
4. Top with green onions and serve!
