Vegan Holiday Cranberry Sauce

Cranberry sauce

Vegan Holiday Cranberry Sauce
Serves 8 • Total Time: 45 minutes  • FODMAP rating: low

A holiday spread isn’t complete without cranberry sauce. This sauce offers antioxidants and vitamins that are immune-boosting and delicious! 

Ingredients
2½ to 3 cups (12 oz) fresh or frozen cranberries
¾ cup water
¼ cup maple syrup
juice from one orange, optional
¼ to ½ teaspoon of ground cinnamon, optional 
chopped pecans, optional garnish

Instructions
1.Rinse cranberries and discard any as needed.
2.In a medium-sized saucepan, add cranberries, water and maple syrup. 
3.Let it come to a boil over medium-high heat and cook for 5 to 7 minutes, stirring occasionally to prevent burning.
4.Reduce heat to medium-low and then add the orange juice and let cook until the cranberries pop and thicken, stirring occasionally for about 7 to 10 minutes. Then remove from heat and let cool to room temperature. 
5.Taste and add more syrup, water, orange juice or cinnamon to taste, be careful not to over sweeten and hide the tartness. Store in an open container and chill for a couple hours in the fridge before serving. For best results, let it sit overnight in a covered container.
