Vegan Creamy Piña Colada Parfait

Creamy Piña Colada Parfait
Serves 4 • Total Time: 5 mins • FODMAP rating: low

The key to this parfait is the coconut extract. You can use vanilla extract if you don’t have any, but using coconut extract really makes it taste like a piña colada. You can use firm or extra firm tofu. Silken tofu will make it more like a yogurt (and you don’t need to add as much liquid). Extra firm tofu will make this dish seem more like greek yogurt (with a similar protein profile). Try to use a plant-based coconut milk from the milk section, not canned. Although canned does work if that is all you have, keep in mind it has higher fat content but also adds more depth of coconut flavor to the dish (especially if you don’t have coconut extract). Any sweetener of choice also works, but if you use a non-caloric sweetener like stevia, you will want to adjust the measurements to taste. Also, feel free to toast the coconut flakes to make it extra delicious!

Ingredients
1 package extra firm tofu
½ cup coconut plant milk (or any plant milk)
¼ cup sweetener of choice
1 teaspoon coconut extract
Toppings
shredded coconut
chopped pineapple

Instructions
Place all the ingredients in a high speed blender and blend until smooth or for about 1 minute. Add more milk if needed to blend.
Add toppings and serve.
Yogurt can be stored for up to 7 days.
