Vegan Chocolate Coconut Snowballs

Vegan Chocolate Coconut Snowballs
Total time: 15 minutes
Makes: 15 snowballs

This is our Christmas version of a home made Lara bar! These snowballs are easily customizable! Add whatever nuts, seeds or dried fruit to them to make them yours! They make the perfect vegan treat to bring to any holiday gathering this year!

Ingredients
1/4 cup unsweetened coconut flakes
1 cup raw, unsalted almonds (or other nuts)
1/3 cup cacoa power or cocoa powder
15 pitted dates
1/3 cups water

Instructions
1. Add almonds and cacoa or cocoa powder to a food processor and blend for 15 seconds. Transfer for a mixing bowl.
2. Add dates and water to the food processor and blend until smooth, stopping to scrape down the sides as needed. Add to the almond and cacoa mixture. Stir until combined.
3. Using damp hands, take 1 tablespoon of dough and roll into a ball and then roll the ball in the coconut. Repeat with the remaining dough. Place in freezer for 30 minutes.
