Vegan Chocolate Mug Cake

Vegan Chocolate Mug Cake
Serves: 1 | Total Time: 5 minutes | FODMAP rating: High

If you are craving something sweet and don't want to spend a lot of time making something, this is the perfect easy, budget-friendly, delicious vegan option for you! This recipe is oil-free, dairy-free and packed with nutrition. It comes together quickly and is easy to double, triple or even quadruple based on the number of people you are serving.

Ingredients
3 tablespoons whole wheat flour (or oat flour)
2 tablespoons cocoa powder
1 teaspoon flax seed
1/4 teaspoon baking powder
1/8 teaspoon salt
3 tablespoons maple syrup
1 tablespoon applesauce
1/2 teaspoon vanilla extract
2 tablespoons plant milk (choose sweetened if you have it)
1-2 tablespoons chocolate chips
1 teaspoon crushed walnuts (optional)
1 teaspoon peanut butter (optional)

Instructions
1. Add the dry ingredients–flour, cocoa powder, baking powder, and salt–to your mug and mix them together well.
2. Next, add the wet ingredients–applesauce, maple syrup, non-dairy milk, and vanilla extract. Mix thoroughly.
3. Add the chocolate chips, walnuts and peanut butter and mix. You can sprinkle a few more chocolate chips and walnuts on the top as well.
4. Place in the microwave and cook for about 1 to 1.5 minutes. Some microwave cooking times may vary, but it usually takes a little over 1-minute. You might want to check the consistency after one minute and add additional 10-15 seconds if needed. It is yummy if it’s a little fudgy in the middle.
