Tofu dill dip with vegetables

Tofu Dill Dip
Serves 10 • Total Time: 1 hour  • FODMAP rating: medium to high

You’ll love this plant-based substitute for a classic creamy dill dip. Because of tofu’s lack of flavor, it absorbs other flavors like a sponge.

Ingredients
1 (16 oz) silken tofu
1 tablespoon dried dill weed
2 teaspoons dried parsley flakes
2 teaspoons onion flakes
1 teaspoon onion powder
¾ teaspoon garlic powder
¾ teaspoon salt
1 tablespoon + 1 teaspoon fresh lemon juice
¼ teaspoon fresh lemon zest

Instructions
1.Place everything together in a food processor and blend until smooth.
2.Scrape down the sides with a rubber spatula and blend everything again.
3.Let chill for 1 hour before serving.
4.Enjoy with a vegetable platter or with crackers.

*Don’t forget to preload on vegetables before you eat!
*FODMAP Swaps: Check the introduction to the meal guide for appropriate substitutes for onion and garlic or keep it to under 1 teaspoon total and increase as tolerated
