Super Healthy Chocolate Chip Cookies

Super Healthy Chocolate Chip Cookies
Makes: 18 cookies • Total Time 40 minutes: • FODMAP Rating:high

Can the words "healthy" and "cookies" go in the same sentence? You bet they can and this recipe is here to prove it! The base of these cookies are made with walnuts, dates and oat flour instead of traditional flour. Walnuts are full of essential nutrients such as omega-3 fatty acids and antioxidants. Dates contain fiber an antioxidants and oat flour provides you with whole grains. 

Ingredients
1 1/2 cups raw walnuts
1 tightly packed cup dates , pitted
1 cup oats blended into flour
1/4 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon vanilla extract
1 tablespoon ground flax seeds
5 tablespoons water
1 teaspoon apple cider vinegar
½ cup chocolate chips

Instructions
1.Preheat the oven to 350 F. In a large food processor briefly process the walnuts into a crumbly texture.
2. Blend ½ cup of oats in a high speed blender until it becomes flour.
3. Add in the dates, salt, baking soda, vanilla, flax, water, and vinegar. Process for 30 seconds. Add the oat flour. Process again, until the batter looks relatively smooth. It will be sticky.
4. Add in the chocolate chips, and process briefly to mix them in. Use a tablespoon or 1-ounce cookie scoop to scoop the dough.
5. Drop the cookie dough onto the lined baking sheet, and use your fingers to flatten and shape the cookies. (They don't flatten on their own like regular cookies.) Feel free to add more chocolate chips by pressing them into the top of the cookies.
6. Bake at 350ºF for 12 minutes, or until the edges are lightly golden. Let them cool completely on the pan, as they will be fragile while they are still warm. Store the cookies in an airtight container in the fridge or freezer, and serve cold for the most firm texture.

*Nut-Free: swap out walnuts for sunflower or pumpkin seeds
