Rustic Garlic Mashed Potatoes

Rustic Garlic Mashed Potatoes
Serves 6 • Total Time: 40 minutes  • FODMAP rating: medium 

These mashed potatoes are just as tasty as the traditional kind. Cashews are known as the “vegan cow” for their ability to make plant-based foods taste rich and creamy.


Ingredients 
4 pounds russet potatoes, cut into 1-inch cubes
¾ cups cashews
1½ cups water
2 cloves garlic
1 teaspoon dried rosemary 
1 teaspoon dried thyme
1 tablespoon salt for boiling water
¼ teaspoon ground black pepper
1 teaspoon everything but the bagel seasoning
more salt to taste (if needed)

Instructions
1.Bring a large pot of water with salt to a boil over high heat. Carefully put potatoes in boiling water. Cover and reduce heat to medium and boil for 15 minutes or until potatoes are easily pierced.
2.While potatoes are boiling, place cashews, garlic, and water in a high speed blender. Blend on high until smooth (about 1 minute)
3.Drain water and return potatoes to pot. Using a potato masher or large mixing spoon and mash until smooth.
4.Stir in garlic cashew cream first to coat the potatoes then add rosemary, and everything but the bagel seasoning salt to taste.

*Don’t forget to preload on vegetables before you eat!
*Nut-Free: Swap out soaked cashews for silken tofu or full-fat coconut milk
*FODMAP Swaps: Instead of plant-based butter, use garlic infused olive oil and/or asafoetida powder and dried chives instead of garlic
