LEMON BERRY “YOGURT” PARFAITS
SERVES 4 • TOTAL TIME: 15 MINUTES + CHILLING TIME • FODMAP RATING: MEDIUM
Lemon is a rich source of vitamin C which is an antioxidant, protecting cells from damage and helps
with skin integrity, iron absorption and digestive health.
Ingredients
1 (12 oz) package extra firm silken
tofu (must be silken)
4 lemons for â…“ cup fresh lemon juice
1 tablespoon lemon zest
½ cup sweetener
½ teaspoon salt
1 teaspoon lemon extract, optional
Optional toppings
berries
crushed graham crackers
Instructions
1. Blend all ingredients together in a blender or food processor.
2. Place in a covered container and store in the refrigerator for a few hours
for the zest to give it a stronger lemon flavor or serve immediately with
optional toppings.
3. To create a parfait, layer crushed graham crackers with the pudding and
berries in small glass cup.
*Don’t forget to preload on vegetables before you eat!
Keep smoothie portions under 1 cup and increase as tolerated due to combination of silken tofu;
avoid using more than ½ teaspoon of honey, date or coconut sugar per serving
