Easy Bruschetta Pizza

Easy Bruschetta Pizza
Serves: 3 • Total Time: • FODMAP Rating: High

If you are trying to cut out dairy from your diet, but still want to eat pizza then this recipe is for you! It's packed with plants and is bursting with flavor with all the spices and seasonings added to it. What makes it really stand apart though, is the balsamic glaze! You can buy balsamic glaze at your local grocery store, but it is also easy to make at home. Simply bring balsamic glaze to a boil and cook for 20 minutes until it's thickened up!

Ingredients
6 whole wheat pitas or Mini Naan bread
1 cup marinara sauce
1 large cucumber
1-2 tomatoes
2 cloves garlic minced
1 teaspoon italian seasoning
salt and pepper to taste
1 bunch basil
¼ cup balsamic glaze

Instructions
1.Preheat the oven to 400 degrees. Place pitas on a large cookie sheet and place in the oven (for about 5 minutes).
2. While pitas are cooking, cut the cucumber and tomatoes and add to a large bowl. Mince garlic, cut basil, and add italian seasoning and salt and pepper. Mix everything together.
3.Pull pitas out of the oven, flip them over and add 2-3 tbsp of marinara sauce to each pita. Then add bruschetta mixture to each pita. Place back in the oven for another 10 minutes. 4.Remove from the oven then drizzle balsamic glaze over each pita and serve.
