Apple Nachos with Dairy-Free Date Caramel Sauce

Apple Nachos with Caramel Sauce
Serves: 4-8  • Total Time: 15 minutes • FODMAP rating: high

A very easy all-fruit treat that is very fun to make and eat! For a dessert nacho bar party, let everyone make their own plate and customize their toppings. 

Ingredients 
Caramel Sauce
6 to 8 large medjool dates or 12 deglet noor dates*
½  cup canned light or regular coconut milk 
¼  cup hot water
1 teaspoon vanilla extract

Apple Nachos
4 apples, consider 2-4 different varieties and colors
¼  cup peanut butter or almond butter
shredded coconut
chopped nuts
dried cranberries
mini chocolate chips

Instructions
1.Blend all the caramel sauce ingredients together in a blender until very smooth. 
2.Arrange apple slices on a plate. 
3.Slightly melt nut butter in the microwave for 30 seconds, if needed, to be pourable. It's best to not use the bottom of a jar of natural nut butter, as it's usually stiff.
4.Drizzle caramel sauce and then peanut or almond butter over the apples. 
5.Sprinkle with desired toppings--coconut, chopped nuts, chocolate chips, etc. 
6.Serve immediately. 

 

*Don’t forget to preload on vegetables before you eat!
*If dates are hard, soak in the water and coconut milk for 30 minutes before blending. 
*FODMAP swaps: Instead of dates use ½ cup of maple syrup or swap out 1 maple syrup:2 date portions as tolerated; keep apple portions to under â…› whole apple or ¼ cup
*Nut-Free: Use sunflower seed butter, soynut butter, or even cookie or granola butter in place of nut butter, which may alter taste
