2-Ingredient High-Protein Vegan Pudding

This super quick, creamy pudding is made with just two ingredients—vegan pudding mix (yes the Jello brand does have dairy and gelatin free flavors--like chocolate and vanilla!) and tofu. It’s high in protein, silky smooth, and comes together in minutes.


Ingredients

  • 1 (12–14 oz) package firm or extra-firm tofu, drained

  • 1 (3.4 oz) box vegan pudding mix (chocolate, vanilla, or any flavor—just make sure it’s gelatin-free and dairy-free)

  • ½–¾ cup sweetened plant milk (soy milk for extra protein works great)


Instructions

  1. Drain the tofu: Open the tofu package and pour off any liquid. Pat dry with a paper towel.

  2. Add to blender: Place the tofu, pudding mix, and ½ cup plant milk in a high-speed blender or food processor.

  3. Blend until silky: Blend on high until completely smooth and creamy. If the pudding is too thick, add more plant milk 1–2 tablespoons at a time until you reach your desired consistency.

  4. Chill: Transfer to a bowl or individual cups. Refrigerate for at least 30 minutes to let the flavors set.

  5. Serve & enjoy: Top with fresh fruit, coconut whip, or a sprinkle of cacao nibs if desired.


Tips & Variations

  • For a richer flavor, use silken tofu instead of firm tofu (but it will be softer).

  • For extra sweetness, add 1–2 tablespoons maple syrup before blending.

  • Works great as a fruit dip—especially with strawberries, bananas, or apple slices.
