I changed my family’s diet as a mom with six kids, 8 years and younger, with a husband recovering from the after effects of his stroke. No formal nutritional education. I decided to go completely plant-based and I haven't looked back since. I just feel so good! I went into this not really knowing what to expect, but then I found Alisia and looked forward to her Sunday thoughts on plant-based eating and was hooked right away to all her knowledge.
Last Saturday I ran my first marathon and the entire time I was fueled by apple sauce, bananas, and then half a sweet potato at about mile 22. I was sore the day of but the next day I was pretty much good to go. On Monday, just 2 days after the marathon, I resumed my normal exercise routine. I was shocked at how great I felt and how easily I recovered. I trained by drinking beet juice before my runs and it was a game-changer for me. I used to huff and puff bad while I ran, but when I take beet juice I notice a positive change in my endurance and breathing.
I often get asked if I am bored of my meals. But I truly look forward to meals and the variety of things I can make. I love being able to use my creativity to create my past favorite recipes into new plant-based recipes. So if there is a meal you would like to try to make a plant-based version of, let me know! Hi I’m Rachael. I have four kids and I started eating plant-based at the beginning of the year with PlantWhys. I originally tried this to see if it helped me but was happy to find out how much it helped my son. We already didn’t eat much-processed food but we did eat meat and a lot of dairy.
About 3 weeks in I got an email from my son's teacher. She wanted to know what I changed because she saw so much improvement with my son. He has ADHD and I have spent thousands of dollars trying many things (5k just last year—OT, neurofeedback, diet changes, etc.) nothing helped until we went plant-based. He now is off all medication and is doing amazing in school.
We now love carrot hot dogs, risotto, whole-wheat pasta, and oatmeal. For snacks, we have always had fruits and veggies. We make energy bites and whole wheat muffins. My son was most excited about having whole wheat again. We cut it out at the suggestion of a doctor but that wasn’t what was causing the problem. I am so glad we went plant-based.

Since June I have lost 45 lbs! I used to be around 243 and now I am around 198. I haven’t been perfect, but I have been trying to follow a plant-based diet as close as I can along with exercise and it has shown amazing results! One of the pictures is from June 1st and the other is within the last week in one of my old jeans.
One other huge benefit has been my blood pressure used to be high at 132/81 and now it is normal at 117/72. My waist went from 38 to 34 and my shirt size from XL to medium. I have been able to go running and it doesn’t hurt my knees like before, I don’t snore and I sleep better. All around I am so happy I have done this and mostly from just changing the way I eat.

I enjoyed eating meat, hard to say no to a perfectly cooked rack of lamb or bone-in rib eye! My skin however was not happy with me. I’ve managed my eczema for several years but had a bad break out after eating two 38 oz steaks! I already knew the benefit of plants as most do however I underestimated the power they could have when making it the soul item I consumed. Ali had always underscored the importance of plant-based eating.
PlantWhys was perfect because it did not limit me in eating. There are so many varieties of plants and recipes and Ali gave me so many great ideas. After 3 weeks of eating delicious plant-based meals, my eczema completely cleared up! Normally, I would need steroid creams to get those results but these results came from the inside out! I was diagnosed with colon cancer on September 11, 2020. I had experienced a miscarriage in January of that year, and couldn’t shake the feeling that something was wrong. After several months of blood work, I went in for a colonoscopy where my tumor was found. I struggled through chemo and basically ate anything that even sounded appetizing. One of the hardest parts was that I couldn’t eat the healthy food I had enjoyed before because of frankly-it hurt. Eating beans and broccoli gave me horrible gas as I healed from resection of my colon, and the poisonous chemo drugs I had been putting in my body for six months. I lost a lot of weight but that’s what happens when you aren’t eating. When I finished my treatment in May of 2021, I knew I wanted to put myself back into eating plant-based and making healthier choices for myself and for my family.
I was led to the PlantWhys group coaching program. I dove into the course and digested every bit of information they shared. It has taken a lot of work to get my family eating plant based-and there are still times when we aren’t perfect at it. But then I re-read some of the study guides, or I try a new plant-based recipe and it just feels so good. Eating plant-based doesn’t have to be difficult. I used to think it would be so expensive to eat this way-the truth is…my grocery bills are lower-and the fact that our health is improving with each meal, decreases the cost of medical care down the road.
Eating plant-based has given me back control. Six months after chemo, my blood work is all in the normal range and I give a lot of credit to finding this course. PlantWhys saved me. As a T2 diabetic for nearly 11 years, I’ve prided myself on consistently keeping my A1C well under 7.0 as my doctors taught. Most of the time it has been well under 6.0. I accomplished this by following the doctor’s guidelines of low carb, high protein diet. By every indication, I felt I was in complete control and doing well.
Suddenly 5 years ago, that changed. I was rushed to the ER and learned that I was in kidney failure. I spent a week in the hospital and another month on dialysis. This left me with 30% kidney function and high blood pressure. I was on 4 high dose medications. I further pushed the low carb high protein diet and saw A1C numbers between 4.70-5.60. Great right?
2 years later I developed a diabetic ulcer on my foot. I was in the hospital 5 days, I did hyperbaric 3 hours/day, 5 days/week for 6 weeks, had doctor visits 1-3 times per week, was on a scooter for an entire year, and nearly lost my toe (or more). I’m so grateful that healed up, but something had to change!!! Thankfully I found Ali Essig and PlantWhys!!! I’ve always been a meat & potatoes guy, so when anyone ever mentioned “plant-based” anything, I was sceptical. I immediately came to realize that for the past 11 years, I was only treating the diabetic symptoms, not the underlying problem.
I’ve now been plant-based since January-2021, and I’m learning how to use plant-based food as medicine. The first few days were extremely difficult, but on day 4, I began to see results, and results are what motivate me. My blood pressure dropped below normal for the first time in years, so with the help of my doctor, I began reducing my BP medications. Thanks to weekly group sessions and personal one-on-one weekly coaching with Ali, I’m well on my way to better health. This experience is changing my life! I took Ali’s course from @plantwhys and learned so much. It was simple. It made sense. It was empowering. Ali helped me. I love to learn and had so many questions. Ali pointed me to good sources, books, and research. At one point, I was so confused at why, when I was eating healthy, I wasn’t losing the weight or why I didn’t feel the greatest. I just recently finished the PlantWhys course. I genuinely can't recommend this course enough.The information is essential for anyone who wants to take control of and make informed decisions about their diet and overall health. Similar information is available from a variety of sources but this course saves you time by compiling it all in an accessible, structured sequence that will show you how to make immediate improvements to your health. Even as someone who has been a plant-based eater for many years, this course helped refresh my memory on many topics, refine my knowledge, subtract things from my diet that were unnecessary or detrimental, and incorporate new things that I'm confident are contributing to various aspects of my health. It is also accessible–They recommend a 90% plant-based diet with 10% wiggle room where you can still enjoy other foods.
