One day back in 2017 I was feeding my kids mac and cheese and chicken nuggets when it hit me hard, “I thought I would be a better, healthier mom than this.” But it’s hard, and these foods are convenient and make my life easier. 

Two years later, after adding twin boys to our gang, I found myself racing into the ER to see my husband slumped over in a wheelchair looking like he had just aged 50 years.


He was suffering from a stroke. 


After days in the hospital and multiple tests, they found no clear explanation. No hole in his heart, no heart arrhythmia, no genetic history. The only direction we were given was a piece of paper that said he needed to follow a heart-healthy diet by avoiding trans fat, saturated fat, cholesterol, and by eating more fiber and avoiding alcohol. 

I dived deep into the research and found that the best diet to prevent the kind of stroke my husband had is a plant-based diet. But it’s also the best diet to avoid most of the top 15 causes of death in America. It sparked an intense passion to share this news with the world. Because while I thought I didn’t have time to eat healthy with six little ones underfoot, if you don’t make time now, your body will make time for you in the future in the form of disease, sickness, or tragedy.


As a result of switching to a plant-based diet...


...my husband's important health numbers have significantly improved. His cholesterol, triglycerides, and blood pressure have all gone down. And he has lost over 20 pounds and has kept it off for years without exercise or calorie restriction.

While I’m thrilled with what we’ve managed to accomplish, I’ll admit that changing my family's eating patterns was a real struggle at first.

In the beginning, I didn’t know what I was doing and I didn’t have anybody I could ask.

Each time I went to make a quick lunch or dinner, I had to completely change my patterns. I used to use cheese and meat in many of our favorite dishes, and it was a struggle finding yummy recipes without animal products.

Yet even after all that research, I still made a lot of expensive mistakes along the way … costing me lots of time and money on programs, classes, books, and recipes, while causing me plenty of frustration when no one in my household wanted to eat it.


The good news is that I learned from those mistakes...


...and today, I have plant-based eating for longevity down to a science.

I know exactly how to cook a delicious meal for my family without meat or dairy—two things that are at the heart of almost every standard American meal. And most importantly I have a true understanding of WHY this is the diet our bodies were meant to follow.
